Delicious Chocolate Cake


Actually I have too many things to write! But since there are too many, I don't really know where to start. Plus, now is 11.30 pm and my eyes are getting smaller and smaller every minute. These couple of days had been very hectic to me. Let me just write a bit about today.

I iced this cake for my niece Alya Farhani who turned 9 yesterday. My brother went outstation yesterday and couldn't collect the cake. The recipe of this cake will be posted at the end of this entry. So keep reading....

HAPPY 9TH BIRTHDAY ALYA DARLING....



At the same time, I got an order from Amy who is Mak Chu's friend for these cupcakes. The cupcakes are for her son's first birthday, the handsome Danish. HAPPY BIRTHDAY DANISH. Hope you like the cuppies and thanks for ordering ya...maaflah kalau ada yang terkurang ye... mama jual...



When I was half way decorating Amy's cupcakes, I received a phone call from my aunt in Bangi to inform me that my other aunt, HAJJAH AZIZAH in Shah Alam had passed away. Inna lillahi wa inna ilaihi 'rajiun. Informed hubby about the sad news and he asked me and mom to get ready to go to Shah Alam to pay our last respect. May her soul rest in peace.... Al-Fatihah......





It's been quite a while since I last posted a recipe in here. So for this entry, I will post the chocolate cake recipe that I've made for Alya's birthday cake. Got it from a cocoa tin, back there in Malawi.....huhuhuuhu.... how I miss Malawi so very much!



DELICIOUS CHOCOLATE CAKE

3 eggs separated
120 g flour
175 g sugar
60 ml oil
125 ml hot water
24 g cocoa powder
2 teaspoons baking powder
a pinch of salt
5 ml vanilla essence

Method :
- Sift flour, baking powder and salt together
- Mix cocoa and hot water and allow to cool
- Combine egg yolks, oil, sugar, vanilla and cocoa mixture
- Add this to dry ingredients and mix well.
- Whip egg whites till stiff and fold lightly into mixture.
- Bake in a pre-heated oven at 180 C for 40 to 45 minutes.

Note :
If I want to make a Black Forest Cake, I normally use this recipe for the cake.

Alamakkkkk mama kena 'tembak' lagi.. this time dari Kak Liza . Hish akak ni...dalam pada kecoh memasak tu, sempat lagi 'tembak' kita eh... Tak apalah... sporting punya pasal... kita layannnnn gak....

Mop seluruh rumah...ikut angin. Kalau rajin, selalu. Kalau malas, seminggu sekali...Mop dapur...ikut kaki... kalau kaki kata melengas, maka tangan pun kenalah capai mop! Hahaha....

4. Apa tugasan terakhir anda sebelum menjelang malam?
Hidang makan malam untuk mak, Syahmi dan hubby.

5. Apa menu hidangan makan malam anda yg paling simple?
Nasi goreng la...

6. Minuman selalu anda buat waktu pagi?
Red Guara DCL (aik... promosi lagi!)

7. Sebelum tidur apa yg anda suka lakukan?
Check handphone kot ada message yang masuk tanpa disedari... Lain-lain tak sempat dah sebab bila naik katil je, terus 'blackout'! Hahaha...

8. Harus menjawab tag yg tertera nama di bawah?
Oh mestilah jawab kalau orang dah bagi assignment. Barulah dikatakan sporting... ahaks... itu jawapan kalau mama free la. Kalau tak free, sampai sudah pun boleh terlupa. Jadinya, kalau ada sesiapa yang pernah tag mama dan mama belum jawab sampai ke hari ini, harap maaf dan harap dapat peringatkan mama semula ye.... ya ampun....


Okay, sekarang ni, siapa sporting nak kena TAG ni, sila angkat keyboard tinggi tinggi biar ma nampak!

Lontong Singapura


KUAH LONTONG SINGAPURA
Source : SAJI Magazine, October 2008

Ingredients :

Bean curd ~ diced and fried
Tempe ~ fried
Su'un
Cabbage
Long beans
Lemon grass
Coconut milk

To be blended :

3 tablespoons chilli paste
4 shallots
3 cloves of garlic
100g dried shrimp

Method :

1. Heat oil and add in the blended ingredients. Fry till fragrant.
2. Add in lemon grass and stir.
3. Pour in the coconut milk and add salt. Let it simmer.
4. Add in tempe and bean curd.
5. Finally add in cabbage, long bean and su'un.
6. To be served with rice cubes.


KUAH LONTONG SINGAPURA

Bahan-bahan :

Tauhu ~ digoreng

Tempe ~ digoreng
Su'un
Kubis
Kacang panjang
Serai
Santan

Bahan Kisar :

3 sudu besar cili kering kisar

4 ulas bawang merah
3 ulas bawang putih
100g udang kering ~ ditumbuk

Kaedah penyediaan :

1. Panaskan minyak dan tumis bahan kisar hingga garing.

2. Masukkan serai. Tumis hingga naik bau.
3. Tuangkan santan dan bubuhkan garam. Renihkan.
4. Masukkan tempe dan tauhu.
5. Akhir sekali masukkan kobis, kacang panjang dan suun.
6. Dihidangkan bersama nasi himpit.

Cupcakes for Kak Faridah & Cikgu Rafidah

Busy as a bee....
Last Sunday...


What a day....

Ahakss... how's my poem? Surely will get a big 'telur ayam' (stands for 0 marks) from the English teacher! Well, I am not good at writing poems unlike my daughter Fatin. She writes beautiful poems and often published in the school magazines...That's what you get if reading is your hobby! Eventhough I love reading, I still can't write poems, but at least I can write a bit of grandma and grandpa stories... hahahaha...

Anyway, yesterday was a busy day for me. From the time I opened my eye lids, I was up and about until 1.40am the following day! Since mom was at my brother's house, hubby went out early, golfing and Syahmi as usual, sound asleep, I thought I could stay in bed till late. But soon as hubby reversed his car out of the porch, Kak Ana phoned... come lets go to Pasar Tani! If only I could say NOT TODAY, I would have said it but I can't. I have to go because I am having friends for dinner. Back from the market, as usual, will straight away clean everything that needs to be cleaned... Then bake some cupcakes to fulfill the order....Thank you to Mak Chu for ordering these and a HAPPY BIRTHDAY TO KAK FARIDAH.....



Syahmi wanted these cuppies for his teacher, Cikgu Rafidah. So we sent these to her house.... Hope you liked the cuppies cikgu.....


Speaking of Syahmi, this is what Syahmi had for breakfast....



Kak Latifah and family came at 8.40pm and we dined and chat till 12.15 midnight. It had been quite sometime since we last meet up and we enjoyed each and every minute of the time spent....jangan serik ye kak, nanti datang lagi, kita sembang sakan lagi no..... Opps, I didn't snap the photos of the dishes served. Sorry! Once they left, I tidied the kitchen and went upstairs to iron Syahmi's uniform at 1.20 am. Then 'knocked out' at 1.45am approximately......

That's my Sunday stories..... err..... hellooo hellooo.... gosh...everybody dozed off while reading my boring story... hahahaha......

Something to enlighten you...let's me just post the photo first, then the recipe as I am running out of time....the 'school car driver' has to go out soon.......


Sorry guys, there's a slight mistake that I need to correct. After checking in the magazine, the actual recipe that I had tried was KUAH LONTONG SINGAPURA and not LODEH ya. Sorry for the mistake...

Erah's CC, Fruit Tartlet Tips, Aisyah's gift

Just a quick update for today. I am just exhausted after the ad-hoc programme. Since my mom is staying over at my brother's house for the weekend, hubby decided to visit his relatives in Malacca. So off we went for a day trip....

We left after Erah took her cupcakes. Thank you Erah for ordering from me. Happy birthday to your dear hubby. And sorry for 'bullying' you....jangan serik datang lagi ye....Nice knowing you Erah...



To answer Makcikkantin's question.....
nak tanya, shells tu nanti soft tak after sometime letak custard

Tips :
To avoid the tart shells from becoming soft after piping the filling, you can just melt some cooking chocolate and brush the inner base of your tart shells. Then only you pipe the custard and arrange the fruits. Hope it helps.....

Fruit Tartlet

If you are betting with someone, let say, to carry out a certain task, what will you do?
~ Will you do it straight away to ensure you win the bet?
~ Will you wait for your friend to make a move then only you'll start?
~ Will you do nothing but still hoping to win?

I had a bet with Ana, who will FINALLY bake some fruit tartlet. Why up to that (betting) extend? Well, both of us HAD BEEN WANTING to bake and to eat these fruit tartlet eversince, but it never came to reality! Until Ana had challenged me, who will bake the tarts first, me or her.... that just clicks the switch! I guess I am 'allergic' to the word CHALLENGE! Hahaha.....But when she had put up the challenge, both of us are just taking it easy, though I know that I want to win and she wants to win as well! Funny huh? Everyday, since the day I decorated the chocolate cupcakes with fruits, the leftover fruits are just laying in the fridge and everytime I opened the fridge, the fruits are like screaming to me....Hey lady! When are you going to transform us into Fruit Tartlets!!!...hish kalau betullah buah-buahan tu boleh bercakap, ma rasa, ma tak akan bukak terus peti ais tu... seram! Hahaha...... Finally, last Monday I forced myself to bake the tart shells and yesterday, I did the transformation..... thanks to Mr Alex Goh's recipe for the tart shells, Mak Lang Azie for the guidance, Rinnchan for the custard recipe and last but not least... Ana for the challenge! The Fruit Tartlets are very nice, according to my official food tester aka my mom.......


FRUIT TARTLET
Souce : Chef Alex Goh

THE SHELL
Ingredients :

(A)
200g butter
100g icing sugar
1/4 teaspoon vanilla essence

(B)
1 egg

(C)
420g flour
1 tablespoon milk powder

Method :

1. Beat (A) till soft. Add in B and continue beating till well mixed.
2. Add in (C) to form a soft and smooth dough.
3. Take a bit of dough and press it onto the tart casing.
4. Poke the base with a fork. Bake for 12 minutes or till golden brown. Remove from oven and let it cool.

Note : Tart shells must be kept in an airtight container.

CUSTARD FILLING
Source : Rinn

Ingredients :

2 tablespoons flour
2 tablespoons custard powder or cornflour (I used cornflour)
8 tablespoons sugar
2 cups (500ml) fresh milk
2 eggs
2 tablespoons butter

Method :

1. Mix flour and custard powder/cornflour in a pot and add 2 tablespoons fresh milk. Stir to mix.
2. Add in egg and mix.
3. Add in balance of the milk.
4. Cook on low fire and stir continuously till the mixture is smooth and not lumpy.
5. Once the mixture thickens and shiny, it's ready. Remove from fire and allow to cool. Ready to use.

TO ASSEMBLE :

1. Pipe the custard into the tart shells. I used a piping bag with a star nozzle to do the trick.
2. Arrange the fruits of your choice.



FRUIT TARTLET

PASTRY


Bahan-bahan :

(A)

200g mentega
100g gula ising
1/4 sudu kecil esen vanila

(B)

1 biji telur

(C)

420g tepung
1 sudu besar susu tepung

Kaedah penyediaan :

1. Putar (A) hingga lembut. Masukkan (B) dan terus memutar hingga gebu.

2. Masukkan (C) dan gaul hingga doh yang lembut dan licin terbentuk.
3. Ambil sedikit doh dan tekankan ke dalam acuan tat. Potong lebihan di tepi-tepi acuan dengan pisau.
4. Cucukkan dasar tat dengan garfu. Bakar selama 12 minit atau hingga perang keemasan. Keluarkan dari acuan dan biarkan sejuk. Simpan di dalam bekas kedap udara.

INTI KASTAD

Bahan-bahan :

2 sudu besar tepung gandum

2 sudu besar tepung kastad atau tepung jagung (mama gunakan tepung jagung)
8 sudu besar gula
2 cawan (500ml) susu segar
2 biji telur
2 sudu besar mentega

Kaedah penyediaan :


1. Campurkan tepung gandum, tepung castard/tepung jagung dan gula ke dalam periuk. Campurkan 2 sudu besar susu dan kacau rata.
2. Masukkan telur dan kacau rata.
3. Tuangkan lebihan susu ke dalam bancuhan.
4. Masak di atas api perlahan dan kacau selalu agar bancuhan tidak berketul.
5. Bila bancuhan menjadi pekat dan bersinar, padamkan api dan biarkan sejuk.

Apam 100 Plus


APAM 100 PLUS
Adapted from Apam Bunga Berinti Lemon, Majalah Rasa May 2009
Ingredients :

3 eggs
200 g flour
230 g sugar
1 teaspoon ovalette
150 ml 100plus
Pink food coloring
Vanilla essence

Method :

1. Beat eggs, sugar , vanilla essence and ovalette on high speed till fluffy.
2. Add in flour and continue beating till thick.
3. Pour in 100 plus and mix well.
4. Divide the mixture into two and add a bit of pink color into one part and leave the other plain.
5. Spoon the mixture into prepared cups, almost full.
6. Steam for 15 minutes.



APAM 100 PLUS
Diadaptasikan dari Apam Bunga Berinti Lemon, Majalah Rasa Mei 2009

Bahan-bahan :

3 biji telur
200 g tepung gandum
230 g gula
1 sudu kecil ovalet
150 ml 100plus
Pewarna merah jambu
Esen vanilla

Kaedah penyediaan :

1. Pulul telur, gula, esen vanilla dan ovalet dengan kelajuan tinggi hingga gebu.
2. Masukkan tepung dan pukul hingga pekat.
3. Tuangkan 100 plus dan kacau sebati.
4. Bahagikan bancuhan kepada dua bahagian dan warnakan satu bahagian dengan pewarna merah jambu.
5. Sudukan bancuhan dalam cawan, hingga hampir penuh.
6. Kukus dalam suhu tinggi selama 15 minit..
