Banana Crumb Muffins

What shall I write now? That's what's been playing around in my mind at this moment. And yet, I have 3 blogs of my own! Huhuhuhu...But you know what... actually this morning, when I was busy with the house chores, I have loads of ideas pouring into my mind, only I don't have time to jot them down. Now that everything's done and I have a few hours to myself before bedtime, all are gone, vanish into thin air......

Huh...I'm tired and I don't think I can think anymore. So let's just skip the ramblings for today and straight to 'The Recipe To Share' section, shall we... This time, I'll share this top recipe in Allrecipes, posted by Lisa Kreft. Thank you Lisa.... The recipe was nice and I made twice the very same day and was much enjoyed by both group of visitors who came to visit my mom... Here's for you to try....


BANANA CRUMB MUFFIN

INGREDIENTS :

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

DIRECTIONS

1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt.
3. In another bowl, beat together bananas, sugar, egg and melted butter.
4. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
5. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
6. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.


BANANA CRUMB MUFFIN

Bahan-bahan :

(A)

1 1/2 cawan tepung gandum
1 sudu kecil soda bikarbonat
1 sudu kecil serbuk penaik
1/2 sudu kecil garam
3 biji pisang ~ dilenyek
3/4 cawan gula pasir
1 biji telur, dipukul sedikit
1/3 cawan mentega, dicairkan

(B)

1/3 cawan gula perang
2 sudu besar tepung gandum
1/8 sudu kecil serbuk kayu manis
1 sudu besar mentega

Kaedah penyediaan :

1. Panaskan ketuhar pada suhu 375 F (190 C). Sediakan cawan muffin, serta alaskan dengan cawan kertas.

2. Di dalam mangkuk besar, masukkan tepung gandum (A), soda bikarbonat, serbuk penaik dan garam.
3. Di dalam mangkuk yang lain, campurkan pisang, gula, telur dan mentega cair. Kacau sebentar.
4. Tuangkan adunan pisang ke dalam bahan-bahan kering dan kacau hingga bersatu. Sudukan ke dalam cawan muffin yang telah disediakan tadi.
5. Di dalam mangkuk yang kecil, satukan gula perang, tepung gandum dan serbuk kayu manis. Kacau sebati dan masukan mentega. Gaulkan mengguna hujung jari sehingga menjadi seperti serbuk roti. Taburkan di atas adunan yang telah disudukan ke dalam cawan muffin.
6. Bakar selama 18 hingga 20 minit atau sehingga masak.

Sayur Campur-Campur (Sambal Goreng)

If for the past 46 years (the least), 22nd February is a happy day for us.... but not today. Everything has changed. Today, it's a sombre day for our family. Today is Abah's birthday.....

This morning I mopped the house and ironed the clothes. Why? Besides reason being 'IT'S ABOUT TIME!!', those two chores makes me remember abah even more. I was known as the 'bibik' of the house by abah and mak because I am the one who took care of the mopping section. Everytime I finished mopping, abah will said, "Bersih lantai rumah ni. Sedap kaki nak pijak" (translation : The floor is so clean and nice to step on).. how I missed that phrase.... And why ironing...besides reason being "my pile of un-ironed clothes are as tall as KLCC", abah was the one who taught me how to iron gent's shirt and trousers the proper way! Thank you abah for everything......I had a wonderful 42 years being your daughter just because I had such a wonderful abah..........Al-Fatihah...



Recipe to share today will be our family's favourite. I got the recipe from mom. It's a Java recipe actually. My mom does not have Java blood in her but my abah has (Am I considered mixed-blooded then? Hahahaha..) So she must have gotten this recipe from her late mother-in-law I guess... Well, mom called it "Sayur Campur-campur" (Mixed Vegetable) but my Mak Busu said it's called Sambal Goreng. Whatever the name is, it's not that important to me. What I care the most is, it's yummilicious.....



SAYUR CAMPUR-CAMPUR (SAMBAL GORENG)
Source : My dearest mom

Ingredients :

Potatoes ~ diced
Tempe ~ diced
Tauhu ~ diced
Long beans ~ sliced
Onion ~ sliced
Garlic ~ sliced
Red chillie ~ sliced
Su un ~ soaked
Fresh prawns (but I used dried shrimps, soaked)
Tamarind juice
Shrimp paste
Coconut milk
Salt
Sugar
Cooking oil

Method :

1. Fry the potatoes, tauhu and tempe separately till golden brown. Set aside.
2. With just a bit of oil, fry the long beans till slightly soft. Set aside.
3. Heat oil in a pan and saute sliced onion, garlic and red chillie.
4. Add in the fresh prawns and su-un.
5. In a small bowl, mix tamarind juice with shrimp paste. Pour into the pot and stir.
6. Add in enough coconut milk just not to let the vegetable become dry.
7. Add salt and sugar to taste.8. Lastly, add in all the fried ingredients and stir to mix.




SAYUR CAMPUR-CAMPUR (SAMBAL GORENG)

Bahan-bahan :

Kentang ~ dipotong dadu

Tempe ~ dipotong dadu
Tahu putih ~ dipotong dadu
Kacang panjang ~ dihiris menyerong
Bawang besar ~ dihiris
Bawang putih ~ dihiris
Cili hidup ~ dihiris
Su un ~ direndam
Udang segar bersaiz kecil (mama gunakan udang kering aje, rendam)
Air asam
Belacan
Santan
Garam
Gula
Minyak masak

Kaedah penyediaan :

1. Goreng kentang, tahu putih dan tempe berasingan, hingga kuning keemasan. Ketepikan.

2. Dengan sedikit sahaja minsyak, goreng sayur kacang panjang hingga lembut. Ketepikan.
3. Panaskan minyak di dalam periuk dan masukkan hirisan bawang besar, bawang putih dan cili hidup.
4. Masukkan pula udang segar dan su-un.
5. Di dalam mangkuk yang kecil, gaulkan air asam dan juga sedikit belacan. Tuangkan ke dalam tumisan tadi dan kacau sebati.
6. Masukkan sedikit santan kelapa agar sayuran tidak menjadi terlalu kering.
7. Masukkan garam dan gula secukup rasa.
8. Setelah mendidih, masukkan kesemua sayuran tadi dan kacau sebati.

Chocolate Brownies

It's not always whatever we planned will turn out the way it should be. Sometimes the result will be much better than expected but otherwise, a disastor! Good if it turned out great but if it's disastrous, then you have to think fast and be extra creative to cover the failure, if it's possible that is! Hahaha... Speaking of failure, a few weeks ago, I, for the very first time, tried using my brownies tray with cutters which I had bought quite sometime back. And using a new recipe without reading the feedback about the recipe. My brownies overflowed from the tray, not that much though but since it had rised quite a bit, so the cutters were 'buried' in the brownies. It was a job to take out the cutters, resulting to a tray of broken brownies...err can we even call it brownies? I doubt it... hahahaha...

To make things worse, I had done the brownies for my mom's visitors, our neighbour when we were very young. Aunty Asbah came with her daughter who is the same age as me and happens to be my school mate. When they arrived, I was busy in the kitchen, having a hard time handling the brownies. Managed to get a few pieces of so-called-brownies and the rest... huhuhu... undescribable! I served the few not-so-bad-looking-brownies and start thinking of what to do with the rest. Alhamdulillah, something popped in my mind and I ended up with these....



..........not bad huh??!!! Mind you, it's not the recipe to be blamed, but me, who doesn't study properly how to use the cutters.....

Well, that pleasant failure doesn't put me off. I still have the guts to try out another brownies recipe. But this time, I used the recipe recommended by Mak Lang . Thank you Mak Lang for your continuous encouragement and support. May Allah bless you....

Made this brownies for Azlina. Thank you Lin for ordering with me. I am much relieved when Lin is satisfied with the brownies... Alhamdulillah....



CHOCOLATE BROWNIES

Ingredients A ~ melted
150g butter
220g cooking chocolate ~ cut to small chunks

Ingredients B ~ mix well
260g brown sugar
2 eggs
100g fresh milk
1 teaspoon vanilla essence

Ingredients C ~ sifted
200g flour
50g cocoa powder
1 teaspoon baking powder
½ teaspoon bicarbonate of soda

Method :

1. Sift ingredients C into a bowl.
2. Melt ingredients A. Remove from heat and leave for about 2 minutes.
3. Stir ingredients B just to mix.
4. Pour ingredients B and C into A. Mix using a hand whisk.
5. Pour the mixture into a baking tin lined with greaseproof paper.
6. Bake in a preheated oven at 170 C till done. Roughly about 40 to 45 minutes. Do not overbake.





BROWNIS COKLAT

Bahan A ~ dicairkan
150g mentega
220g coklat masakan ~ dipotong kecil

Bahan B ~ digaulkan

260g gula perang
2 biji telur
100g susu segar
1sudu teh esen vanilla

Bahan C ~ diayak

200g tepung gandum
50g serbuk koko
1 sudu teh serbuk penaik
½ sudu teh soda bikarbonat

Kaedah penyediaan :

1. Ayak bahan-bahan C ke dalam mangkuk.

2. Cairkan bahan A. Padamkan api dan ketepikan, lebih kurang 2 minit.
3. Gaulkan bahan-bahan B hingga bercampur dan sekadar rata.
4. Tuangkan campuran bahan B & C ke dalam A, gaul menggunakan hand whisk
5. Tuangkan ke dalam dulang pembakar yang telah dilapik kertas.
6. Bakar di dalam ketuhar yang telah dipanaskan terlebih dahulu pada suhu 170C hingga masak. Lebih kurang 40 hingga 45 minit.

Happy Birthday Pak Busu



Another birthday? Yes, this time it's my Pak Busu's birthday today (18th February)... HAPPY 5*' th BIRTHDAY PAK USU! It is my great pleasure to be able to bake some cupcakes for him as I have not been decorating cupcakes for quite sometime. So this is somewhat like a melepas gian kind of thingy. So I baked for him some lemon cupcakes and later transformed them into these......


Why so bland mama? A few reasons for that....
i. Not enough time
ii. Not enough preparation
iii. Not enough ideas
iv. Not creative
....and all that reasons are just to cover the TRUTH about MamaFaMi, which is DOESN'T HAVE THE TALENT TO ICE CAKES! Hahahaha...

What really touched my heart was the look on his face when he saw the box of cupcakes which my aunty presented to him. He has the same expression like my abah used to have. The expression that says...alahai, terima kasihlah banyak-banyak.. buat susah susah aje... I really miss that look of my abah.......



Cupcakes order? Yes!!! Thank you Mak Chu, for ordering these for her office. I had fun decorating them... Speaking of cupcakes deco, a few days ago, I was chatting online with a cupcake sifoo . I told her that I am lousy at making swirls with buttercream. She had asked me, what nozzles did I use? And I told her a few of the nozzle numbers that I used. Then she said,"Eh peliknya nombor nozel awak. Kita tak pernah dengar pun". Hahaha... So as a conclusion, don't blame me for not having talent to ice the cakes or cupcakes. Blame it on my nozzles!!!! Hahahahahahahaha.....

Since I am running out of time, I'll skip the 'Recipe to Share Today' part, till my next entry. Not that I have not been doing stuff. Infact, I had been doing quite a good number of 'experiments', just waiting to be shared. Sabar ye kerana sabar itu sebahagian dari iman!

Blueberry Marble Bread

I love to bake breads. I just can't resist to try any bread recipes (the ones that I find interesting and challenging!) that I came across either in the internet, magazines or in my cookbooks. And that passion will increase when my dear daughter is around. She loves eating bread, especially the ones that just came out of the oven! She can smell the bread aroma a mile away! Hahahahaha..... When I saw her enjoying the freshly baked buns... all my effort is worthwhile! I miss you gegirl.....

But it's not always, all my experiments will turn out the way I want it to be. Not all of my experiments are excellent... some are even disastrous!!! Like recently, before I tried this one, I had tried another challenging recipe. It was a job actually, to prepare the bread and what did I get in the end.... a heavy bread... or can I even call it bread???? Hahaha... My mom felt pity for me. All my effort was a waste, she had said. If you had taken a nap instead of trying to bake the bread, you won't be that tired! What she doesn't know is, the more I take naps, the more I'll feel tired!!!! Hahaha... Anyway, I think, the yeast is the culprit! Therefore, I sentenced it to be dumped into the dustbin! ***Hahahaha*** (evil laugh!!!) But that doesn't put me down. I still have my strong willpower to try out bread recipes.... chaiyok mama!!!

Enough said, here's the recipe if anybody care to take the challenge.... good luck to you..... And oh, where's my manners. Thank you Onigiri of MyResipi for this nice recipe. And sorry, I altered your recipe just to give some variety...




BLUEBERRY MARBLE BREAD
Adapted from Onigiri's Chocolate Marble Bread at myresipi.com

Ingredients :

140 ml fresh milk
200 g bread flour
50 g flour
1 teaspoon bread improver
1/2 teaspoon salt
2 tablespoon sugar (I would have added an extra 2 tablespoons sugar so as to give the loaf a bit more sweetness)
1 teaspoon instant yeast
1 tablespoon butter or margarine
1 teaspoon blueberry emulco
a few drops of blueberry coloring

Method :

1. Pour fresh milk into the breadmaker, then add in bread flour, flour, bread improver, salt, sugar, instant yeast and butter. On the mixer to dough setting. I kept repeating the dough setting trice. (One cycle takes about 6 minutes, with my breadmaker)
2. Leave the dough to prove till double the size, around 40 minutes. Punch down to let the air out.
3. Divide dough into 3. Add blueberry emulco and coloring to one portion. Combine the other 2 portions and leave them plain.
4. Roll out the dough separately. Place the colored dough on top of the plain dough.
5. Cover the colored dough with the plain one.
6. Divide into three portions and plait the dough.
7. Place the plaited dough into a sandwich loaf tin.
8. Leave to prove till double the size.
9. Bake in a preheated oven at 160 C for 25 minutes or till the golden brown.10. Slice and serve with jam.







ROTI MARBLE BLUBERI

Bahan-bahan :

200 gram tepung roti

50 gram tepung gandum
1 sudu besar butter atau marjerin
140 ml susu segar
1 sudu kecil yis
2 sudu besar gula
1/2 sudu kecil garam
1 sudu kecil bread improver
1 sudu kecil emulco blueberi
beberapa titik pewarna blueberi

Cara-cara :

1. Masukkan semua bahan kecuali emulco dan pewarna Blueberi, uli sampai tak melekat pada jari. Kalau ade BreadMaker tekan On je.

2. Perap doh selama 40 minit, kemudian tumbuk-tumbukkan doh tadi, keluarkan angin.
3. Bahagi doh pada tiga bahagian. satu bahagian masukkan emulco dan pewarna Blueberi. Kalau terlembik boleh tambah sedikit tepung dan uli macam biasa. pastika adunan betul betul sebati ye dan warna sekata untuk doh Blueberi itu.
4. Satukan doh yang baki tadi dan canai memanjang. Letakkan doh blueberi di tengah-tengah.
5. Tutupkan keseluruhan adunan blueberi tadi.
6. Potong tiga bahagian dan anyam bentuk tocang.
7. Letakkan doh yang telah dibentuk ke dalam loyang sandwich.
8. Biarkan naik dua kali ganda dan bakar pada suhu 160 darjah selama 25 minit atau hingga permukaan nya perang.
9. Siap dibakar , keluarkan dari tin dan sejukkan atas redai. Selamat mencuba.
10. Enak kalau dihidangkan dengan jem.

Thank You Kak Liza






Yesterday morning when I visited my Cyber Sifoo's blog, I noticed that my name's being mentioned....


MamaFaMi - memang setiap hari akan skodeng apa yg diujimasak oleh cik puan ni..rajin tahap kayangan....tiada tolok banding dalam alam maya ni..kalau tak caya..kena p blog/web cik puan ini...

Hohoho Kak Liza... am I THAT hardworking??? I think you've got the wrong description about MamaFaMi or maybe you're talking about OTHER MamaFaMi! Hahaha... If I am THAT hardworking, then the Mamak's Restaurant opposite my house won't have the chance to taste the sweetness of my money!!! Hahahaha.... Anway, thank you for the lovely comment, and amin to that. I'll take that as a compliment ya... And thank you once again for the awards which I gladly brought back to my humble hut......

Kuih Bahulu



In the previous entry, I had followed up on Shima's comment. And this time, it'll be Farina of Salt n Turmeric's turn. She had written in the comment box, she's going to try out the Pulut Kuning. Guess what Farina, before you had the chance to try out something from my page, I had already tried something from yours and it turned out to be lovely and not only that, it's very easy to prepare as well! I had an eye on that recipe as it sounded so easy to prepare and not to mention Farina's tempting photos of the Kuih Bahulu. I made half the recipe and we enjoyed 16 cute, yummy, soft Kuih Bahulu..... Thanks Farina for the recipe and allow me to paste it here once again for others to try.....

KUIH BAHULU
Makes between 30-35 cute little thang

Ingredients :

3 eggs1 cup sugar
1 1/4 cup flour (sifted)
1/4 teaspoon bicarbonate of soda
2 teaspoons vanilla essence
2 tablespoons cooking oil/butter

Method :

1. Pre-heat oven at 375F
2. In a bowl, beat eggs until frosty then add sugar. Continue beating gradually changing from slow to fastest until mixture becomes sticky. About 12-15min.
3. Add vanilla essence and gradually add in the flour and butter. Continue beating for another 10min on high.
4. Grease mould and fill up to 3/4 of the 'holes'.
5. Bake for 15 min.
6. Once done, use a toothpick or wooden skewer to 'pick' them out and lay out on cooling rack.
7. Continue steps 4-6 until all batter are used.


The recipe in Malay version is actually how I had prepared my Kuih Bahulu.

KUIH BAHULU
Menghasilkan lebih kurang 30 - 35 biji

Bahan-bahan :

3 biji telur
1 cawan gula
1 1/4 cawan tepung gandum (diayak)
1/4 sudu kecil soda bikarbonat
2 sudu kecil esen vanilla
2 sudu besar minyak masak / mentega

Kaedah penyediaan :

1. Panaskan ketuhar pada suhu 375 F / 190 C.
2. Di dalam mangkuk pengadun, pukul telur hingga kembang dan masukkan gula. Teruskan memukul sehingga bater bertukar ke warna yang lebih cerah.
3. Masukkan esen vanilla.
4. Kaupbalikkan tepung dan minyak masak.
5. Sapukan sedikit minyak di dalam acuan kuih bahulu. Tuangkan batter hingga menutupi acuan.
6. Bakar sehingga kuning keemasan.

Pulut Kuning

This was what Shima wrote in my Rendang Daging comment column...

"sedihnyerrr bila ma ckp cmtu...sabar ye ma...kira kuat semangat jgaklaa ma ni sanggup wat rendang ni kalau org len maunyerr bertahun br wat blk... best ampak rendang tu mkn ngan pulut kuning iksh3..."

....translation would be....roughly like this....


"It's so sad when mama wrote like that...make sabr... mama is considered strong to be able to cook this dish. Others may take years... The rendang should be nice if eaten with Pulut Kuning....."

I know I didn't translate it accurately but better than not translating at all huh! Hahaha... Anyway, yes, it breaks my heart to prepare all my dad's favourite dishes because the memories of him will rush into my mind. But then, at times it helps to ease the feeling of missing him. Life has to go on right...

Actually I prepared some Pulut Kuning to go with the Beef Rendang. Here's the recipe and thanks a bunch to my cyber cooking sifoo, non other than Kak Liza .


PULUT KUNING (Kak Liza)

Ingredients :

1 kg glutinous rice ~ washed
3 pieces dried tamarind (asam keping)
2 tablespoons tumeric powder ~ mix with water and put through strainer
enough water to soak the rice
banana leaves to layer the steamer
3 cups thick coconut milk
salt
sugar

Method :

1. Soak glutinous rice with dried tamarind, tumeric mixture and enough water for 5 hours. Stir once in a while to allow the color to blend well with the rice.
2. Rinse the water through a sieve.
3. Get the steamer ready.
4. Layer the steamer with banana leaves.
5. Spread the glutinous rice on the banana leaves.
6. Steam till the rice is cooked or till you can see the steam coming out from the sides of the cover.
7. Remove the cooked rice from the steamer into a big bowl.
8. Pour the thick coconut milk (mix with salt and sugar) into the bowl. Mix well.
9. Spread the mixed rice back onto the banana leaves in the steamer.
10. Steam till cooked or till you can see the steam coming out from the sides of the cover.

Rendang Daging

This dish used to be my abah's favourite dish..... I miss you abah .......



BEEF RENDANG

Shallots ~ sliced
Garlic ~ sliced
Ginger ~ sliced
Chillie paste
Corriander ~ fry without oil and blend
Lemon grass and turmeric ~ blend with a bit of water
Beef ~ cut to small chunks
Thick coconut milk
Brown sugar or jaggery
Salt
Turmeric slice
Sweet soya sauce (for color)
Kaffir leaves
Coconut paste (kerisik)

Method :

1. Heat oil in a pot and add in the sliced ingredients. Fry till fragrant.
2. Add in chillie paste and corriander. Stir well.
3. Add in the blended lemon grass and turmeric.
4. Add in the beef and let it cook on medium heat.
5. Add in coconut milk, brown sugar or jaggery, salt, turmeric slice, sweet soya sauce and kaffir leaves. Mix well.
6. Let the rendang cook on medium heat till almost dried and add in the coconut paste.
7. Mix well and remove from heat. Ready to serve.




RENDANG DAGING

Bahan-bahan :

Bawang merah ~ dihiris
Bawang putih ~ dihiris
Halia ~ dihiris
Cili kisar
Ketumbar ~ disangai dan dikisar halus
Serai dan kunyit ~ dikisar bersama sedikit air
Daging ~ dipotong kecil
Santan pekat
Gula melaka
Garam
Asam keping
Sedikit kicap manis (untuk warna)
Daun limau purut
Kerisik

Kaedah penyediaan :

1. Panaskan minyak di dalam periuk dan masukkan bahan-bahan yang
dihiris. Goreng sampai garing.
2. Masukkan cili kisar dan ketumbar kisar. Masakkan hingga pecah
minyak.
3. Masukkan serai dan kunyit yang dikisar. Kacau biar sebati.
4. Masukkan daging dan masakkan hingga jus daging kering.
5. Masukkan santan, gula melaka, garam, asam keping, sedikit kicap manis

Assorted Rolls


ASSORTED ROLLS

Ingredients
:

330g high protein flour
7.5g instant yeast
1/8 teaspoon bread improver
195g water (might need less)
20g egg (I just use 1 whole egg)
60 g castor sugar
1/4 teaspoon salt
30g butter

Filling :
Sausages
Anchovies sambal
Kaya

Method :

1. In a mixing bowl, add in high protein flour, instant yeast, bread improver, castor sugar, egg and salt.
2. Start kneading using the dough hook on slow speed. Gradually, pour in the water a little at a time. When it starts to form a dough, add in butter. Continue kneading till a soft dough is formed.
3. Leave the dough to prove double in size.
4. Punch down the dough to let the air out.
5. Divide the dough according to the weight you wish. Make into balls and leave to rest for 10 minutes.
6. Shape accordingly.
7. Leave to prove for 40 minutes - 1 hour.
8. Bake till golden brown.

Cakes for my Mak Busu


Made these two cakes for my Mak Busu to bring to her office. It had been almost 2 months I haven't played around with icing. But I just can't let down my Mak Busu so I said to myself, just give it a go and try my very best. Well, this is the best that I can do in such limited time.... Sorry Mak Busu if the taste and the look is not to your expectation.....
